POSTS FROM JUNE 24 2011

 This website is dedicated to all those who are over weight, or have health problems, and want to learn why. Why is it that you do everything you are told and STILL can't lose weight. You diet only to gain the weight back. Why is it that you don't feel like you would like to. Is it just part of getting old?


I'm going to tell you how I went from death to life. What I've learned during my decade long study into health, diet, and nutrition, how I live now and give tips and how to information. I offer help free of charge.  I hope you will join me in my journey.

My study into health and nutrition began 13 years ago. At that time I had just lost my wife to a health related illness. I was obese and in bad health myself. In the following  2 years I lost 160 pounds and lots of health problems.

I started a blog to talk about what I had learned back in June of 2011. I have posted most of my old blog posts here on this blog. Go back several pages to read the first, and work yourself up to the newer posts.  Some of the links are no longer active, it has been 10 years. I will be adding updated information.

Sudden Change

We live our lives day to day with no great changes.
Then one day, one hour, one instant something happens that changes our lives dramatically and forever.
That happened to me with the death of my wife of 36 years. 37 years with her gone in in instant.
The girl I dated in high school, the girl I married, the woman who bore my children, my friend, my companion, my business partner, my love, gone in an instant.
I can tell you, it's devastating.
A year and a half later and I'm still not over it, I don't know If I ever will be.
Then to realize that her death was because of diet, because of the lifestyle we led.
This is an eye opener, a life changer.
It was a shock to realize that it could have been prevented if only...
I realized I had to make changes for the sake of my children still at home, or I would be next.
I see people making the same mistakes that we made.
I want to tell others what happened and what can happen to them if they don't change now. Tell them the mistakes that led to the sudden change in my life.
I want to yell STOP, LOOK AT WHAT YOU ARE DOING TO YOURSELVES!
Most people don't care, they won't listen, they don't want to hear it.
They become offended and angry at you.
I remember the scripture in Hosea 4:6 that says "My people are destroyed for lack of knowledge". Yes they are.

WARNING! The information you read here will be offensive to some. If you don't want to hear that the food you are eating is making you fat and sick then click the back arrow, put your head back in the sand and go on with your life as usual.

I am reminded of the metaphoric phrase used to describe the act of lashing out at the (blameless) bearer of bad news, " Kill the messenger".
Most of the sickness and suffering could be avoided if we changed what we eat.
Diets and pills don't work. But weight loss is simple, it's easy, it's doesn't cost a lot of money. In fact you can lose weight, be healthy and spend less.

I believe grocery stores like Walmart and Kroger should be required to offer free nutrition classes to everyone. Offer discounts to people to take the classes. So many times while in the checkout line I see people with little children and a cart full of junk food. It's sad.

Since I began my new life style I've lost 135 pounds. A little over 2 pounds per week and still dropping. If I can do it you can too.

Since I wrote this blog back in 2011 I've learned a lot. I know that If grocery stores were required to teach nutrition they would teach the lies that the USDA and FDA push. They would not go against their suppliers.

Nothing New

What I'm going to share with you is nothing new.

Here is some of the information I found when I began searching for a healthier lifestyle. This information should be taught to all school children. It should be posted in all grocery stores, like the warning message on a pack of cigarettes.

Dr. Lustig is Professor of Pediatrics in the Division of Endocrinology at the University of California, San Francisco. He is one of the leading experts on childhood obesity, and has been a pioneer in decoding sugar metabolism.

You Have to Start Somewhere

When I decided we needed to make a change in what we were eating I realized I didn't know much about nutrition. I had been avoiding breakfast and eating what I thought was a reasonable diet. Like most people I was taught to eat a low fat, high carb diet. That's a diet with plenty of "healthy" grains.
Like many fat people I had a diet book on the shelf. I pulled it out and read it. This book was not so much a diet book as a book on food and the body.
The book is "You on a Diet: The Owner's Manual for Waist Management" by Dr. OZ and Dr. Roizen.

Since reading that book I've learned much more about diet and nutrition. The book was a good start, we all have to start somewhere.
Through the book I did learn some of the foods to avoid.

I had a talk with my two sons and told them we needed to make a change. I pointed to myself and said this was their future if they continued to eat like we were. I reminded them that I was once as skinny and fit as they are. After loosing their Mom they were ready to listen and agreed to make the change with me.
I pulled the trash can over to the refrigerator and started throwing things out. Next I moved to he cabinets and continued to rid ourselves of the junk we had been eating. I told them we would prepare all the food we ate from fresh ingredients and there would be no more fast foods.

I got on the internet and started my search. You will find all kinds of fad diets and bad information online, but there is lots of good sound information available. After a year and a half of research I have come up with some good, books, web sites, blogs, and podcasts.

One of the best web sites and podcasts is "Livin La Vita Low Carb" with host Jimmy Moore. Jimmy sets the example of what can be accomplished by lifestyle change. ONEDERLAND

If you've ever watched the TV show called The Biggest Looser you know what the word ONEDERLAND means. It's when your weight drops below the 200 pound mark.
Well as of this week I'm in ONEDERLAND. I've dropped below 200 pounds. I've not been below 200 pounds in many many years. I've lost 137 pounds so far.

My daughter returned home from college this month. She is a great cook. She knows what I eat and has for the most part adopted the lifestyle herself. I was worried that I would gain weight because of her good cooking, she has proven that eating well and healthy can taste good too.

An old Chinese proverb says: "The temptation to quit will be greatest just before you are about to succeed."

That's the difference between a diet and a lifestyle. You always want to quit a diet because you are hurting your body and it won't take it for long. You end up gaining back any weight you loose plus you ad more. If you would like to know more about this check out the latest Underground Wellness podcast.

FREEDOM

"Intelligent men learn from their own mistakes; Wise men learn from the mistakes of others".

When I walk through a grocery store now, I enjoy a feeling of FREEDOM.
I'm free from the addictions that grip the majority of people. FREEDOM from the brainwashing we've all received from childhood on what is GOOD for us.

I know that I am no better than anyone else. I too was were they are. I didn't know the truth about the food I was eating. It took a traumatic event in my life, the sudden death of my wife to wake me up. (see my first post to learn more). That's what it took to get me asking questions, and finding answers. The answers are there, you just have to want to ask the questions.

We are held captive by our food addictions. It's killing us. We are spending billions each year to treat these addictions. Thousands of lives are ruined and people dying because of diet.

I love meat, especially hamburger and hotdogs. There is nothing like a cookout in the summer. The problem is you can't eat the buns. I've found a site that solves that problem. BE WISE

Every where I go, people who know me ask me how I have lost so much weight. They want to know what diet I'm on.  I tell them I'm not on a diet, that diets don't work and even harm your body. I tell them how easy it is to lose weight. NO diets, NO calorie counting, NO worrying about cutting the fat out, NO worrying about cholesterol, NO running on the treadmill for hours a week, and NO drugs to  take. I let them know they can eat all the fat they want, all the meat and eggs they want. WOW, they say, now they are REALLY interested.  Then, when I tell them what I've done to lose the weight their expression drops. NO they say, I can't give up my pasta, my bread, my potatoes, my cake, my ice-cream, MY SUGAR!  I tell them they WILL give it up sooner or later. My wife gave it up the instant her brain exploded. Excuse me for being so BLUNT, but I've lived it. That was the wake-up call for me. When you know to do good and do it not you are sinning. The body is the temple of GOD. Does God want all that JUNK, all that POISON in HIS TEMPLE? Remember Christ drove out the money changers with a whip. NOT SO SUBTLE HUH?

I know we all have to come to it on our own. No one can force anyone to quit a bad habit.  Interventions don't work with drug users, alcoholics, or sugarholics. They have to come to it on their own, they have to reach bottom, and WANT to change.  Some one said "Intelligent men learn from their own mistakes; Wise men learn from the mistakes of others." Be wise, learn from your mistakes and the mistakes of others. Change now before it's too late.  There are things worse than death. My wife would not have wanted to live in a vegetative state, with someone having to take care of her, she would have wanted to go as quick as she did.  I know people who are suffering greatly because of their diets. 

We've all been lied to. We have been deceived by our government and healthcare system. And all for MONEY!

I'm surprised  by how many doctors are now seeing the truth about diet. For the most part, they only come to the truth when THEIR health is threatened. Then they began to study, they find out they have been lied to. They have been taught to follow the company line. If some one has a problem, treat the symptom, give them a drug. There's no money in finding out the why of a problem, no money in teaching people to eat right. If you can't turn it into pill it's not considered.  Listen to the "Livin La Vita Low Carb" podcast and you'll hear some of the doctors  I'm talking about.

What do the following celebrations have in common? Christmas, Easter, Valentines Day, Halloween, Birthdays. Besides being pagan in origins, they are all about SUGAR.

There's a lot of money spent on candy during Halloween. According to Nielsen Research,  in 1999 Americans spent approximately $1.9 billion on Halloween candy. Easter ran a close second with $1.7 billion spent. That was over 10 years ago, bet it's a lot more today.

Would you give your children a poison snake to play with? You are when you give them candy.

MYTH

Santa Claus, The Easter Bunny…

It's amazing that in this age of information, so many people are still in the dark about nutrition. But, we have all been deceived from childhood. We live in a world held captive. I am reminded of a book called "A World Held Captive" by the late Herbert W. Armstrong. Do a Google search you will find it free online.

We've been lied to from childhood. Remember how you felt when you learned there was no Santa Claus? Then there was The Easter Bunny, and The Tooth Fairy; this was just the tip of the iceberg. We got over those lies, we grew up. But the lies about nutrition, health, and diet still hang around our necks like a millstone.

It's encouraging to see that some are waking up. Thanks to the internet, we have all this great information available to us right in our homes. We're in the drivers seat when it comes to learning about nutrition, health and diet. We can know more than many of the Doctors out there.

I'd like you to check out a video about a book called "The Vegetarian Myth" by Lierre Keith.

If you don't know who Dr. Eades is, he wrote a book called "Protein Power" along with his wife Dr. Mary Dan Eades.

Dr. Eades says, "Before I get into a discussion of the absolutely phenomenal book, I've got a few disclosures to make. First, I'm not much of a believer in the notion of man-made global warming or climate change… Second, I am not particularly pro-feminist. And I certainly don't hang around with any self-proclaimed radical feminists…
Given the above, you wouldn’t think I would enjoy and recommend a book written by a self-proclaimed radical feminist who is obviously a believer in global warming and the impending end of the earth as we know it.  I wouldn’t think so, either. Not my cup of tea even when it is sort of preaching to the choir.
But I can tell you that Lierre Keith’s book is beyond fantastic.  It is easily the best book I’ve read since Mistakes Were Made, maybe even better.  Everyone should read this book, vegetarian and non-vegetarian alike.  If you’re a radical feminist, you should read this book; if you’re a male chauvinist, you should read this book; if you have children, especially female children, you should read this book; if you are a young woman (or man) you should read this book; if you love animals, you should read this book; if you hate vegetarians, you should read this book; if you are contemplating the vegetarian way of life, you should definitely read this book; if you have a vegetarian friend or family member, you should this book and so should your friend.  As MD said after she read it, “everyone who eats should read this book.”

GOOD FOOD

Let's talk about food. I've had people tell me that they can't afford to eat good food. It might seem cheaper to eat junk, but consider the end of it. On the day my wife died from a massive stroke about 820 people in this country died that same day of the same thing. That many die EVERY DAY, 365 days a year from obesity related causes. In comparison, 58,000 men died in the 10 year Vietnam war, and that was with people TRYING to kill them. Over 300,000 die a year in this country from obesity. The ones that die quickly are the lucky ones, many are disabled or live with all kinds of suffering because of their diet.

Walking through a big chain grocery store the other day I told my boys that if all the junk food was removed, there would only be two isles. There is a sense of freedom, as I mentioned earlier, when you can walk past all the junk, know that it is bad for you, and not be tempted to buy it.

Sugar, the Legal Heroin? Refined sugar is very similar to heroin, one of the most addictive and deadly narcotics out there. Yes, you read that right. Sugar and heroin have more in common than not. But there's one key area where sugar and heroine are different... sugar is legal.

I could go on and on about the bad stuff (and probebly will). Let's talk about what is GOOD for you.
As my knowledge has increased through many month of study, my diet has evolved to what many call Paleo. This is called Paleo because many believe man has been on earth for tens of thousands of years and we should eat what Paleolithic man ate.
Lets not get into a discussion of how long man has been on earth . The point is the diet is right. We should eat a high fat, high protein, low carb diet. Dr. Atkins had it right. It's all about low carbs and high fat. Take a look at http://dietdoctor.com and "LCHF for beginners"

I eat lots of meat and fat, good fat from clean fish and animals along with oil from coconuts, and olives, lots of leafy green vegetables, and I avoid starchy vegetables like potatoes. The only fruit I eat is berries and cantaloupe, in season. Most fruits have too high sugar content and should be avoided.
I drink water and herbal tea. Peppermint is my favorite, I take it with me when I go out and keep a big bottle of it in the fridge at home. The only liquids you should have in your fridge is water or herbal tea. Don't drink fruit juices, they are just sugar water. If you want orange juice, eat an orange, you'll get the beneficial fiber along with the juice. If you drink milk, make it whole raw milk. It is available in most locations but you will have to search for it.
You should eat grass fed beef, and free range chickens and eggs. To find local sources of grass fed beef, and free range chickens go to a site called www.eatwild.com

Here is a shopping list from the www.dietdoctor.com site:
• Butter
• Heavy cream (40%)
• Sour cream (34%)

• Meat (minced, steak, stew pieces, steaks, fillets, etc.)
• Fish (preferably fat fish like salmon or mackerel)

• Turkish yoghurt (10% fat)
• Cabbage (cabbage, cauliflower, Brussels sprouts, etc.)
• Other vegetables growing above ground
• Frozen vegetables (broccoli, wok vegetables, etc.)

• Nuts

And a list of things to avoid:
• Candy
• Potato chips
• Soft drinks and juices
• Margarine
• Sugar in all forms
• Wheat flour
• Pasta
• Rice
• Potatoes
• Everything that says “low fat” or “no fat”
• Ice cream
• Cookies
And let me add all corn products to the list of things to avoid. I'll tell you why.
From the latest issue of "Mary Janes Farm" magazine, (yes I do read it) an article titled "More Disturbing Info on Bt Corn"
"Monsanto has long reported that the genetically modified Bt corn (now present in virtually all non-organic corn) is safe for humans because the toxin in it that kills insects cannot survive the human digestive system. But a Canadian study published in Reproductive Toxicology reports that, in blood samples of 39 pregnant women who ate conventional diets, 93 percent of their fetuses had the toxin in their systems."

I'm down another 2 pounds this week- Down to 197- a 139 pound loss so far.

You can pay the farmer more now, or pay the doctor more later, the choice is yours.

When people see how much weight I've lost, the typical question besides how did you do it, is how much more are you going to lose. Since I'm not on a diet I don't know how much more I will lose. At some point I will level off. I do feel that I can lose another 10 or 15 pounds. I'm losing slower but still dropping weight.
A while back I was driving in the car and suddenly felt that I had left my wallet at home. You know men can't go anywhere without their wallets. I reached to my left rear pocket where it would have been and there is was. That was the first time I realized how much weight I had lost. I hadn't lost my wallet but the fat in my rear end that always let me know my wallet was there. A great feeling.

Remember, diets don't work. They do more harm than good. It has to be a change in the way we think, the way we live our lives. It has to be a lifestyle change. Because of the circumstances that brought me to this awaking I know I will never go back to the old way. If I'm ever tempted, the images of the tragedy that woke me up are always there.

We all need help along the way. If you are familiar with Alcoholics Anonymous you know of the buddy system. Having someone you can call on when you are at a low point. We all need help and support. There will be times when you just can't handle it by yourselves. This is another instance where the Internet is very helpful. There are lots of folks out their just like us. They are going through the same things and need help from time to time. I have found several low carb and paleo forums that I've joined to talk to people who are of like mind when it comes to diet and health.
I recommend that you join one or more of these groups.

COST

"I can't afford to eat healthy." I hear this all the time. It's true, food costs are going up.
For most of our married life, my wife did all the shopping. Now that I have to, I see the increases every time I shop.
While shopping at a big grocery chain, I like to observe what people are buying. Next time you go shopping take a look at what folks have in their carts. It's mostly JUNK.
Billions of dollars are spent on junk food and fast food every year in this country. Because of the lies we've been fed by our government, even when people think they are buying healthy food they buy JUNK. They pay extra for whole wheat bread, low fat food; fruit that's shipped hundreds or thousands of miles, and so on.

And again, the USDA food pyramid has killed thousands and cost us trillions in health care costs.  The Weston A Price Foundation offers a critique of the 2010 USDA Dietary Guidelines. They spoke at the National Press Club on Feb. 14, 2011.  It's a 13 part video on YouTube. WATCH IT ALL.

There is plenty of good research to prove that eating carbs makes you want to eat more. You get hungry faster and are never satisfied. Again, read the book called "Wheat Belly", you'll find the link in an earlier blog.

No one really knows how much junk foods shorten the lifespan, but it would probably not be unrealistic to use the same figures that are often quoted for cigarette smokers. Every cigarette smoked means a 15-minute decrease in your life. Junk foods, with all their poisons and additives, may be more harmful than smoking and it would not be unreasonable to assume for every bag of cookies or quart of ice cream, you're knocking off hours, days, and weeks of your life."

OK we know that junk food is bad for us and costs us thousands of dollars a year. We know that eating carbs/sugars makes us want to eat more.
The solution? Simple, eat more meat and less carbs. Here are a few ways to eat better for less.
When you decide to stop buying the junk, you'll free up all that money for good food.
There are ways of buying the good food for less. Many areas have food cooperatives. You join with others in buying food in bulk. Check your area. Try a web site called www.LocalHarvest.org at, http://www.localharvest.org/food-coops/
Another great web site is www.eatwild.com. A site where you can buy locally produced food. I've found that I can buy grass fed organic beef, chickens, and lamb at a greatly reduced price. Along with locally grown produce.

You can have fresh greens all year long with inexpensive sprouts.
The cost of sprouting seeds is substantially less than the cost of buying the mature plant at the grocery. A tablespoon of lettuce seeds costs about 60 cents, and provide nearly as much bulk as a small head of lettuce, which can cost around $2.00 at the store.
Another way to obtain good food is through barter. I sell Kentucky Whiskey Barrels, rain barrels, barrel planters, and barrel parts. One day I sent an email to all the stores selling sprouting seeds that I could find on line. I offered to trade my product for theirs. One company agreed and I traded 2 half whiskey barrel planters for a big box of assorted sprouting seeds. I'm going to try the same with other food producers.

Lets talk of the benefits of eating low cost readily available sprouts.

WHEAT

DON'T EAT WHEAT!

We're moving into a new house this week. It's been raining here all week and the forecast calls for rain for the next few days. Bad for moving, good for the very dry state of Kentucky.

I went in to the local water company to set up my service on the new house. The walls of the small rural water company office are filled with dozens of old pictures of the local community from the late 1800's and early 1900's. One thing that struck me was that there were no fat people in the pictures. There were class pictures from local schools, pictures of church pick-nicks, pictures from local businesses, and family reunions. NO FAT PEOPLE. What has changed from then to now?
Our food has been genetically modified, and we eat processed sugars.

WE KNOW NOW

I received my copy of "Wheat Belly" last week. I'm already on my second read. I highly recommend this book. We aren't in Kansas anymore, Toto. The wheat we eating is not the wheat we ate as children. It's killing us.

I'm here at my desk watching a news show online. One of the folks has a canned energy drink on their desk. I hate to see people drink that junk. It's like fingernails on a chalkboard to me now.
I grew up drinking sugar junk. I'm amazed that I'm still hear telling you about it.

I don't know why I'm still here and my wife isn't. I know that I can't go back to the lifestyle that led to her death. I might die today, there is no guarantee of tomorrow in this life. But I have to do the best I can every day. There is no excuse for anyone eating junk food anymore. Just like we now know the dangers of smoking or drinking and driving, we know the dangers of sugar and carbs like wheat.

You know to do right, do it.

MOTIVATION

One of the best things about blogging is the people you meet. I am getting emails from all over. Talking to lots of folks, I enjoy it.

Christine emailed me with an idea for a diet/fitness app she is working on that I believe will help people stay motivated. I wish her success with it.

Christine got me thinking about motivation. I have to admit that I haven't had much of a motivation problem. The circumstance that led to my lifestyle change has been all the motivation I need. I admire people who are trying to get healthy. Before that life changing event, I had a hard time with motivation. Like many I tried to diet from time to time with no success. Another great thing about blogs is that people can help motivate each other. The internet is a very helpful tool in our quest to live healthy. There are many podcasts filled with educational and interesting interviews. There are online low carb/paleo forums where people can get together to encourage each other. On YouTube you will find many educational and motivational videos on health and diet.

Speaking of podcasts I would like to congratulate Jimmy Moore on the 500th episode of his "Livin' La Vita Low Carb" podcast. Keep up the good work Jimmy. I hope you are listening to Jimmy's show, It has helped me in my low carb journey. I post to the "Livin' La Vita Low Carb Forum". There you will find people going through the same daily struggles that you are. It helps to be able to talk.

IT'S SIMPLE

I was just on one the "Livin' La Vida Low-Carb Forum" and I noticed a discussion on "safe starches". Here is part of it:
"…mitochondrial dysfunction in the pre-obese, the formerly obese, and the obese who are still gaining weight is an known and quantified problem. The carnitine shuttle and the entire TCA cycle are impaired, leading to a lack of metabolic flexibility. (Normally we switch back and forth to burn glucose when our blood sugar is high or we're exerting ourselves over 50-60% VO2max, and to burn fat at rest...while the impaired are stuck burning a combination of both in all circumstances.)…"

Someone answered the above post with the following:

"People keep over analyzing things.

No other species has to worry endlessly about what to eat or try to figure it out. Humans spend endless hours debating the chemistry of food and people are still getting bigger and more sick.

Cut the sugar, grains, bread and processed Frankenfood and get on with life. The rest is not complicated…."

My reply: "Right on. That sums it up. It ain't rocket science."

Some get bogged down in the science of it. Then there are those who think it can't be that simple. there has to be more to it. They think you can't lose weight and be healthy with out being on a diet, counting calories, eating low fat, eating "healthy" grains, running several miles a day and so on and so on.

It's not complicated, it's not a burden, it's the way people have lived for thousands of years.
One of my favorite words is FREEDOM. We have been set free, we know the truth.
"Then you know the truth, and the truth shall set you free."

FASTING

Today was a day of fasting. If you don't understand what fasting is. It's not just giving up food for a few hours or giving up solid food but continuing to drink liquids. Fasting is giving up food and drink for at least 24 hours.
In times past during fast days I would experience head aches, shaking, and other unpleasant physical symptoms.
After my lifestyle change when I fast, those unpleasant symptoms are mostly gone. I am hungry by the end of the day, but I do not have the cravings and hunger experienced before.

I've lost 142 pounds to date. By this time most of the poisons have worked their way out of my body. 142 pounds of FAT gone. Fat is where the toxins are stored. You will feel much better after getting rid of all that fat. The sugar cravings are gone as are most of the ill effects of the poison wheat I ate. I know some damage has been done but the body is amazingly resilient and self correcting when the toxins are taken away.

There is a down side to losing all that weight. I've had to buy several new suits and lots of shirts and pants. I've even had to buy new shoes as my feet have gotten smaller. As soon as an article of clothing gets to big, out it goes. I'll never go back to those fat clothes.
I also suffer all the symptoms of wheat deprivation. To learn what these symptoms are you will have to read a book called "Wheat Belly" by Dr. William Davis.

I've noticed a lot of people who are otherwise trying to eat right and take care of their bodies talk about using radiation ovens, also known as microwave ovens.

We are all here because of a desire to live better, live a healthier life right? The two do not go together, healthy living and microwave ovens.
When I began my life style change one of the things I studied was how I prepared my food. I was shocked to learn the dangers of the little microwave oven on my counter. I threw it out in the trash. I now have a convection/toaster oven that works great and is a much healthier option.

MOVE

You've got to move to lose the blues.

I had a teacher that would say that to his students. He taught even back then that we should avoid sugar laden breakfast foods and exercise more. If I had only listened and learned.

When I began my lifestyle change, I thought as many do that you had to exercise vigorously to lose weight. The biggest loser was a popular TV program and according to the trainers on the show you had to push yourself almost to the breaking point to lose weight.

I didn't have any exercise equipment. I would get out of breath just walking down the drive to get the mail.
After I started to eat better I felt I had to exercise. I bought a Schwinn Airdyne exercise bike on ebay. I could only do 5 minutes at a time on it. How could I be the biggest loser If I couldn't do more than that. I could just hear Jillian yelling at me.

Since then I've learned that you don't have to exercise to lose weight. As the pounds have come off I now feel like exercising. I exercise not to lose weight, although I'm sure it helps, I do it to tone up and feel better. One of the best exercises I've found is rebounding. NASA and the USAF did a study and concluded that "rebounding is the best exercise devised by man". Rebounders are small trampolines. You'll want to get a good quality one. Don't bother with the cheap brands like you find at walmart. The one I chose is the Bellicon.

Rebounding is so much fun, it's like jumping on the bed when you were a kid, but without getting in trouble. Resistance training is important. I didn't have a lot of room for weights, so I bought a Tower 2000The Tower 2000 is a resistance band trainer that hooks on an inside door. I also have a few dumbbells.
As you lose weight you'll have more energy and feel like exercising. It doesn't take a lot of expensive equipment or a gym membership to get a good workout. Start out slow and work your way up.

I've been in Tucson Az. for the past 10 days at the El Conquistador Hotel. What a beautiful place. I've had a great time visiting and fellowshipping with friends. I did some walking, but didn't have time to workout in the hotel gym. I'm not looking forward to getting on the scale when I get home. After last years reunion I lost 2 pounds. . Can't wait to get back on my rebounder.

I'm home now. Good news, I didn't gain any weight. Still at my lowest.

WOW

Many times I have wondered why this has happened to me. When you suffer a loss you go through the emotional gambit. I felt like Alice tumbling down the rabbit hole. I believe there is a reason for everything, you just have to figure out what it is.
Sometimes you just have to get out of the way and let it happen. Step back and see where it's leading you.

Since my lifestyle change and weight loss, with all the energy I now have I find it hard to contain myself. I want to tell everyone. When I see fat people I want to tell them they don't have to be fat. I want to share my story with them. They're my people, I was a big fat man. I met with Morpheus and I took the red pill. I see how we are all slaves to the system. I see the lies and how simple the truth is.

It didn't take me long to realize that you can't tell people, most don't want to hear it, they don't believe it, some get offended by the truth. They are so caught up in all the lies that they think the truth is a lie. Most people would rather die than change the way they eat, they do it every day.
They have taken the blue pill. After offending someone I was told to be a light, and reminded that a light is silent.

It's official: saturated fat is making a comeback.  Out of the Netherlands comes another study that is casting doubt on the belief that intake of saturated fat causes heart disease.  Here is the conclusion of their abstract (acronyms replaced):
"We conclude that avoidance of [saturated fatty acids] accumulation by reducing the intake of [carbohydrates] with high glycaemic index is more effective in the prevention of [cardiovascular disease] than reducing [saturated fatty acids] intake per se.
That's a huge statement.  And for the nerds among us, here is the full conclusion:
The total body of evidence suggests that attention should be shifted from the harmful effects of dietary [saturated fatty acids] per se, to the prevention of the accumulation of [saturdated fatty acids] in body lipids. This shift would emphasise the importance of reducing dietary [carbohydrates], especially [carbohydrates] with a high glycaemic index, rather than reducing dietary [saturated fatty acids]. The chronic interaction of [saturated fatty acids] with our immune system elicits so-called chronic systemic low-grade inflammation, which underlies the metabolic changes referred to as the (atherogenic) dyslipidaemia of the metabolic syndrome or the lipidaemia of sepsis. The ultimate goal of the ensuing insulin resistance is the re-allocation of energy-rich substrates, such as glucose, to the immune system while the change in our lipoprotein profile aims at the limitation of the inflammatory responses and the repair of the resulting tissue damage. Dietary [saturated fatty acids] belong to the many false triggers of inflammation that result from the conflict between our slowly adapting genome and our rapidly changing lifestyle, but among these many factors they are not the most important. A reduction in the consumption of CHO with a high glycaemic index, trans-fatty acids and linoleic acid, and an increased consumption of fish, vegetables and fruit, and a reduction of inactivity, sleep deprivation and chronic stress seem more realistic approaches to fight the current pandemic of cardiovascular disease resulting from chronic systemic low grade inflammation.
Translation: Don't eat high glycemic index carbohydrates, stay away from trans fats, don't cook with vegetable oils (like canola oil), cook with lard or coconut oil, exercise, get some sleep, relax."

WE'VE COME A LONG WAY

I'm old enough to remember the cigarette commercial that went, "You've come a long way baby".

We have indeed come a long way. I remember the time before the internet was available for home use. I would go to the University of Louisville's engineering school computer lab and access the internet. Back then only universities and government research sites were connected. That was before the world wide web, before web browsers like Internet Explore, Firefox and search programs like Google and Yahoo.

Today everyone has access to the internet. We walk around with more powerful computers in our pockets than NASA used to land the first man on the moon. Even those who don't own a personal computer can go to the local library and get online for free.

I remember the encyclopedia salesman that would come to the door trying to sell those expensive books that held all that knowledge. Today we have all the accumulative knowledge of mankind at our finger tips. Anything you want to know is just a few key strokes, and a mouse click away.

Getting back to that cigarette commercial, doctors used to advertise the benefits of smoking cigarettes. We've come a long way indeed.

Today we know that cigarette smoke and even second hand smoke is bad for our health. We know that we were lied to all those years. We have proof of the lies. The tobacco companies have paid out billions in settlements for all the lies and deception.

I hope you are now aware of the lies told to you by the USDA. By the big food and drink companies. Lies told to us by the healthcare industry. LIES, LIES, LIES!
The truth is available to us. We have the knowledge we need to make healthy choices.

We've talked about the dangers of sugar, excess salt, starches, and grains like wheat. We've talked about the dangers of radiation ovens (microwave ovens). See previous posts to learn more.

Now I would like to talk about the dangers of eating PORK. That's right all you paleoers out their, PORK IS NOT GOOD FOR YOU! I know that goes against everything you've been told, but WHO told you that pork was safe to eat. Wasn't it the same people that have lied to you about the other so called good, healthy food?

For those who are still reading this I hope you will take a look at the proof that I will present here. Don't take my word for it. I'm only going to scratch the surface of all the information that is available. Study into the subject yourself. You have all the tools you need to find out for yourself.

When you buy a new car you go to the owners manual to find out what grade of fuel and oil to use in your engine. You wouldn't put diesel fuel in a high performance gasoline engine. You wouldn't put axle grease in the crankcase. The same with the human body. To find out what fuel is best for us we go to the owners manual, the Bible. The word of God tells what food is healthy for us to eat and what to avoid. God should know, He made us.

"Pork 101: Know the Facts.

Pork is one of the most consumed meats in the world. China is the largest producer of pigs that were first domesticated way back around 7500 B.C.
The Center for Disease Control and Prevention (CDC) states that more than 100 viruses come to the United States each year from China through pigs. There are some obvious concerns about this. Aside from not needing more viruses to fight off, some of these viruses can prove to be downright dangerous to humans.

Of course, you’re probably familiar with H1N1, better known as ‘the swine flu.” This too is a virus that has made the leap from pig to human.

But H1N1 is not the only disease to fear from the pig. There are other sicknesses you can get from eating the meat of the pig.

Pork meat is loaded with toxins, more so than most other meats like beef and chicken.
Is Pork Meat Toxic?

There are reasons that the meat of the pig becomes more saturated with toxins than many of its counterpart farm animals. The first reason has to do with the digestive system of a pig.

A pig digests whatever it eats rather quickly, in up to about four hours. On the other hand a cow takes a good twenty-four hours to digest what it’s eaten. During the digestive process, animals (including humans) get rid of excess toxins as well as other components of the food eaten that could be dangerous to health.
Since the pig’s digestive system operates rather basically, many of these toxins remain in their system to be stored in their more than adequate fatty tissues ready for our consumption.

Another issue with the pig is that it doesn’t have any sweat glands. Sweat glands are a tool the body uses to be rid of toxins. This leaves more toxins in the pig’s body.

I don’t have to tell you that when you consume pork meat, you too are getting all these toxins that weren’t eliminated from the pig. None of us need more toxins in our systems. In fact we should all be doing what we can to eliminate and cut down on toxin exposure. One vital way to do this is by choosing what you eat carefully.

Trichinellosis, Pork Meat, and Your Health.

Did you know that pigs carry a variety of parasites in their bodies and meat? Some of these parasites are difficult to kill even when cooking. This is the reason there are so many warnings out there about eating undercooked pork.

One of the biggest concerns with eating pork meat is trichinellosis or trichinosis. This is an infection that humans get from eating undercooked or uncooked pork that contains the larvae of the trichinella worm.

This worm parasite is very commonly found in pork. When the worm, most often living in cysts in the stomach, opens through stomach acids, its larvae are released into the body of the pig. These new worms make their homes in the muscles of the pig. Next stop? The unknowing human body who consumes this infected meat flesh.
And while no one particularly wants to consume worms, trichinellosis is a serious illness that you should do virtually anything to avoid.

Common Symptoms of Trichinellosis:

• Nausea
• Vomiting
• Diarrhea
• Headache
• Fever
• Chills
• Cough
• Swollen eyes
• Muscle pain
• Aching joints
• Coordination problems
• Heart issues
• Breathing problems

These symptoms of trichinellosis can really put you out of the game for quite a while. According to the Center for Disease Control and Prevention (CDC) these symptoms can last for weeks and in more serious cases months on end.

The CDC recommends thorough cooking of pork as well as freezing the pork meat prior to cooking to kill off any worms. I don’t know about you, but I don’t feel good about eating anything that I first have to kill off its worms to eat.

In fact, it’s been theorized that trichinellosis is the exact cause of Mozart’s rather sudden death at age 35. An American researcher theorized this after studying all the documents recording the days before, during, and after Mozart’s death. He found that Mozart suffered many of the above listed symptoms and he, himself, had recorded in his journal the consumption of pork just forty-four days before his own death.

But that’s not all….

Pigs carry many viruses and parasites with them. Whether by coming in direct contact with them through farms or by eating their meat we put ourselves at higher risk of getting one of these painful, often debilitating diseases (not to mention put our bodies on toxic overload.)

Pigs are primary carriers of:

• Taenia solium tapeworm
• Hepatitis E virus (HEV)
• PRRS (Porcine Reproductive and Respiratory Syndrome)
• Nipah virus
• Menangle virus

Each of these parasites and viruses can lead to serious health problems that can last for years to come.

What you choose to eat is up to you. Myself, I choose to stay away from unclean pork (and shellfish.) The reasons discussed here are just the tip of the iceberg when it comes to eating pigs and your health.

Do your own research, carefully consider what the Bible so many years ago warned us about, then make your own educated decision about what you choose to feed yourself and your loved ones.

SWEET

Since my lifestyle change and resulting weight loss, (I've lost 144 pounds in the past 20 months) I find that I no longer have a desire for nor do I like sweet food or drink. I wondered if it was just me or do others who adopt the low carb lifestyle experience the same thing. I posed the question on the Livin La Vita Low Carb Forum. As I expected some people experience the same thing. It seems, for some at least, our taste changes, we no longer like or desire sweet tasting foods.

Many are still in the old mindset. they think they must have sweet foods. The old paradigm says we must have dessert with every meal. You feel you haven't had a complete meal if there is no dessert. It's part of our education, or should I say indoctrination from youth. We now know that if you eat sugars it makes you want to eat more of everything else.

Avoiding sugar is a crucial part of a healthy lifestyle. Unfortunately, the belief that artificial sweeteners can allow to have the best of both worlds is simply not true.

There is lots of information online on the dangers of those sweeteners.

Splenda was developed in a lab like other chemical food additive. And like all the other chemical concoctions, Splenda, my friends, is not good for you.

Splenda is the trade name for Sucralose, a synthetic compound stumbled upon in 1976 by scientists in Britain seeking a new pesticide formulation. It is true that the Splenda molecule is comprised of sucrose (sugar) — except that three of the hydroxyl groups in the molecule have been replaced by three chlorine atoms.

Here is the process by which they produce the formula sold in stores:
“1.  Sucrose is tritylated with trityl chloride in the presence of dimethylformamide and 4-methylmorpholine, and the tritylated sucrose is then acetylated with acetic anhydride.
2.  The resulting sucrose molecule TRISPA is chlorinated with hydrogen chlorine in the presence of tolulene.
3.  The resulting 4-PAS is heated in the presence of methyl isobutyl ketone and acetic acid.
4.  The resulting 6-PAS is chlorinated with thionyl chloride in the presence of toluene and benzyltriethylammonium chloride.
5.  The resulting TOSPA is treated with methanol in the presence of sodium methoxide to produce sucralose.”  (Note that methanol, wood alcohol aka paint remover,  is one of the questionable ingredients in aspartame.)
In addition, the bags and packets of Splenda commercially available are not pure sucralose.  They also contain bulking agents.  All artificial sweeteners use bulking agents.  Do you know what they use?  Sugar.  Dextrose, sucrose, and maltodextrin.  (Maltodextrin is corn syrup solids composed primarily from fructose and glucose in a starch form.)   All sweetener packets are at least 96 percent sugar.  Splenda is 99% sugar.
The packets are labelled calorie free as a result of manipulating a loophole in the food labeling laws.  The product can be described as sugar free if a serving contains less than 5 grams of sugar, and calorie free if a serving is less than 5 calories.  So they set the serving size on bags at .5 grams  and the packets contain a serving of 1 gram.  A one gram packet contains 4 calories.   This can be confirmed on the manufacturer’s website in the FAQ section:  “Like many no and low calorie sweeteners, each serving of SPLENDA® No Calorie Sweetener contains a very small amount of common food ingredients, e.g., dextrose and/or maltodextrin, for volume. Because the amount of these ingredients is so small, SPLENDA® No Calorie Sweetener still has an insignificant calorie value per serving and meets FDA’s standards for “no calorie” sweeteners. “
To make matters worse, when sucralose was shown to not raise blood sugars, it was the pure substance that was tested, not the mixture that is sold to the public.  Dextrose, sucrose, and/or maltodextrin are definitely going to raise a diabetic’s blood sugar.  There is also a great deal of evidence that artificial sweeteners actually cause an increase in appetite, causing people who consume them to take in more calories than they would otherwise."

TRIALS

It seems that everyone is going through trials. You name it, people are suffering through it. Don't feel like the Lone Ranger because of your trials.

Some trials we can do nothing about, some we can. A lot of the problems people are having can be traced to diet and nutrition. These are problems we bring upon ourselves, problems we can control to a great extent.

Stop listening to what the USDA and the food industrial complex say is good for you. We've been lied to. The facts and truth are now available, do the research for yourself.

One hundred forty five pounds ago I was having lots of health problems. Most of the problems went away with the weight loss. I feel much better since I've stopped eating the junk. I'm amazed at how wonderfully we are made, and how the body can bounce back once we get back on track. I still have trials, just not due to what I'm eating. The biggest diet related trials are that the chickens aren't laying enough eggs this time of year, or that the butcher seems to be out of grass fed beef most of the time.

The most difficult trial I am going through now is the loneliness. The loss of my wife of so many years. It's like losing part of yourself. Like your not all there, not complete. I saw some old friends over the weekend. A married couple that are both obese and in poor health. They want to change but are having trouble putting the junk out. I told them rather bluntly that one of them would die and this would motivate the other one to make the change. Learn from the mistakes of others. Change your diet now and maybe you won't have to endure this trial.

If you're having health problems take a good look at your diet. Make sure you're doing all you can do to live a healthier lifestyle. If you read my first blog entry you'll see that I emptied the fridge and cabinets of all the junk that we had been eating. You'll find that when you remove the processed foods, sugar, and wheat, you'll drop the weight, and begin to feel better.

I hope you've watched the video on the dangers of sugar, read the book called "Wheat Belly" about the dangers of wheat, stopped eating pork and stopped using radiation ovens.
You can't just cut back. The break with the unhealthy life has to be total. You can never go back to the old way. The knowledge we now have available can truly set us free. It's so simple isn't it?

SURPRISE

It happened again the other day.
It's always interesting to see the reaction of people I haven't seen since my weight loss. When I meet these people it takes a moment for me to realize they don't know who I am.

I'm remodeling a new house, a tradesman that I haven't seen since my last remodel over 2 years ago came to the door, he didn't recognize me. When he figured out who I was through our conversation, his jaw dropped, he said, "wow, you've lost a lot of weight, I didn't recognize you, I thought you were the contractor". He was astonished and wanted to know how I did it.

Everyone wants to know how I did it. I've printed out cards with my blog web address on them. I hand them the card and say, "It comes from knowing what foods to eat, and what to avoid, read my blog".

BARTER

Let's Trade

I know times are tough. I have three children at home and a family business. It's not easy to make a living and eat right these days. We have to work smarter, not just harder to make ends meet. You have to think outside the box.

Barter is a method of exchanging by which goods or services are directly exchanged for other goods or services without using a medium of exchange such as money.

Barter, the way things were done a few generations ago.

Consider trading for food and other items that you need.

I love to trade. I've traded for sprouting seeds. I've traded for a large chicken coop. I am trading for organic vegetable seeds for spring planting.
I will order two dozen chickens from the hatchery in January. I'll even contact several hatcheries and see if they would be willing to barter for the chickens. It doesn't cost anything to ask.

If you are a crafts person, or have a skill that others may need, you can try barter.
You'll be surprised at the people and businesses that are willing to trade. I trade my computer knowledge for haircuts. I haven't had to pay for a haircut for 9 years.

PVC is great stuff.  You can do so much with it and it's cheap.  Here is a web site where you can buy PVC connectors and fittings that will allow you to make many things with your pipe. With corner fittings and a few other key components that are generally not available in hardware stores that sell the pipe, elbows and tees, you could make almost anything. You should plan now for a spring garden. If you don't have a big yard you can start a container garden. If you don't have a yard at all, you can have fresh greens all year long by growing sprouts in your kitchen cabinet. See my earlier blog for sprouting information.

A way to help provide food is to have chickens as pets instead of dogs and cats. Why waste money on animals that you can't eat. Many residential communities and even urban areas allow chickens. As long as you don't have noisy roosters. The girls won't make much noise and are easy to keep. They cost less to raise than dogs or cats, and you can say that your pet provides breakfast food for you. Chickens are great recyclers, they will eat most of your table scraps.

People do have chickens in the suburbs and in cities. You can even have a few chickens in an apartment. There are several companies selling chicken diapers, yes that's right diapers for chickens.

I FEEL GOOD DA DA DA DA DA DA DA DA DA

Like the song says, I FEEL GOOD.

Those of you who have started eating right know what I mean. Once you cut out the sugars, wheat, starches and bad vegetable oils, the weight falls off and your energy level goes through the roof. You feel so much better. I exercise several times a week. I have started making furniture again. For many years I was too out of shape to make my rustic twig furniture, now I'm making two tables a day.

When I walk through the supermarket I hear a constant cha-ching of the cash register in my head as I pass up all the junk I used to buy. I realize the savings I enjoy now along with better health. I have more money to spend on real food.

I have been receiving a lot of good feedback from folks who have made the lifestyle change. If you haven't already, you should read Dr. Davis's book

PAY IT FORWARD

This coming Febuary will be 3 years since I began my weight loss journey. That was 158 pounds ago. I never thought I would lose so much weight or have so much energy. My story has been featured on several other websites. Some of the biggest are Dietdoctor.com, Livin La Vita Low Carb, Wheat Belly, Latest in Paleo, and Carbohydrates Can Kill.  I would like to thank those sites for linking to my blog. I've linked to all of them in the past.

One site that saw my story to on Facebook emailed me and said the the diet I am on is
"unhealthy, not proven by science", and that I was "just trying to build traffic to make money from the ad on my site".  What can I say? My life and the lives of hundreds of thousands of others are PROOF that a low carb high fat (LCHF) Paleo lifestyle works. PLUS we have all the studies that back it up.
Like Dr. James Carlson says, "these are FACTS not opinion".

As far as making money goes, I started this blog to try and help others, to warn them of the dangers of the lifestyle that led to the death of my wife. I haven't made a dime off this blog. Not that there is  anything with making money from your website.  I do it with my business website http://www.KentuckyBarrels.com. If you see ads when you logon to this blog they are placed there by your web browser not me.

This site is not about making money. It's about trying to make the death of my wife have meaning. If others can learn from our example that's all the reward I need.

That being said I am working on a book in which I tell of my journey from death to health.

WorkOut.

I've been working out at the gym 3 days a week for the past 3 months.  I believe working out at the gym is the way to go. I get more out of the workouts at the gym than I do at home. The structured classes are motivation and being around others inspires you to do more.

Letters, oh I get letters

Not letters but the modern equivalent, emails.

I love to hear from readers of my blog. I know I am not alone in my low carb journey.
As of today I've lost 150 pounds. It all began two years ago this month. When I began I never dreamed I'd lose so much weight, or feel so much better.

The latest letter is from Emma. Here is what she says:

"I have been following your blog.
Can you please tell me what you eat? What did you eat at the very beginning of your journey?
I have been trying to do zero carbs for 6 weeks and have only lost 15 pounds. I think the culprit is salt and fake creamer (sugar) that I have in coffee and diet pop. I have a long way to go. I would like to lose 80 pounds.

My answer:

Hi em.

It's nice to talk to people who read my blog.

When I first started my journey I didn't know much about nutrition. At first I learned that I should cut out processed foods, sugars, white flour. That's what I got rid of first. I learned that fast food and prepared foods were bad, so I cut them out. I learned that I should prepare all my food from the freshest ingredients I could find, so I do. I learned that I should cut down on carbs, so I did. Latter I learned the dangers of wheat, all wheat, even what we are told is "heart healthy whole grain". It's all bad.

I've cut out:
all sweeteners.
all wheat products.
starches.
sweet fruits, like watermelon pineapple, grapes, apples...
most vegetable oils.
all pork products.

I eat:
beef, fat cuts and organ meat is the best.
chicken, whole chicken, skin and all. I love baked chicken skin.
turkey, I love turkey bacon.
fish like salmon, cod, tuna, and sardines.
eggs, eggs are one of my favorite foods. I just bought a chicken coop and 28 baby chicks so I can have plenty of fresh eggs.
good oil like olive oil, tallow, and coconut oil.
green leafy vegetables like lettuces, spinach, kale, turnip greens...
I like tomatoes and onions.

When I want buns to go with burgers or hot dogs I make oopsie bread, which is made from eggs and cheese, or coconut and almond flour bread.
I eat crackers made of coconut, almond, and flax seed flour. Add cheese for great cheese crackers.
I make pancakes from coconut and almond flour, topped with strawberries or blue berries, no sugars.

I have plenty to eat, I never get board and I never miss the bad stuff. I don't get hungry all the time. I can miss meals and not even notice it.
I keep lots of raw nuts like almonds, pecans, walnuts, and cashews around to snack on.
I've lost 150 pounds over the last two years, my energy level is through the roof.

I've learned to cut out ALL sweeteners, that means ALL natural or fake stuff. It all makes you gain weight.
Don't eat any foods that come out of metal cans, the BPA lining is a hormone that causes obesity and cancer.

I'm glad to hear about your weight loss. Stick with it, this is just the beginning. You'll continue to lose and feel a lot better.

I went to the dentist this week to have a tooth taken care of, one that has been giving me trouble for a long time.
The dentist said, "I want to thank you for telling me about the book Wheat Belly". I had told him about the book back in November. He said he bought it right after that. He and his wife have read it and changed their lifestyle. He told me of the weight he had lost and the physical symptoms his wife had that are now gone. He said he has given the book out to several friends and fellow dentists. He taught at the Dental school at the University of Kentucky for years before he retired to private practice. He said they are inviting Dr. Davis, the guy who wrote Wheat Belly, to come and lecture. I told him I would like to attend If he does.

More and more people are changing their lives for the better by putting the wheat and sugars out.

I just put a double batch of kale in the dehydrator. My favorite kale is laminate kale, also called dinosaur kale because it looks like dinosaur skin. Kale chips are fantastic, you have to try them. You can buy a very small plastic container of them at Whole Foods for $9.00, or you can make your own.
My little two year old granddaughter LOVES them. We call them Dino Chips.

Kale Facts
Kale is a member of the cabbage family – cousin of broccoli, cauliflower and collard greens – but its leaves do not form a head.   

There are several varieties of kale – curly kale, ornamental kale, and dinosaur (or Lacinato or Tuscan).

One cup of kale (36 calories) is chock full of beneficial nutrients such as:
Fiber – 5grams fiber; raw fiver binds bile acids and helps lower blood cholesterol levels

Antioxidants (carotenoids and 45 flavinoids),

Vitamins (1000% Daily Value vitamin K and 200% DV C) and Minerals (15% DV calcium, 40% DV magnesium, iron, magnesium)…

WAUWATOSA, Wis. -- A local doctor is making the bold claim that the key to shedding pounds, reversing diabetes and stopping migraines is to cut out an ingredient that most people believe is healthy.

Tax payer dollars are being used to try and find a solution to this very dangerous problem, the solution? DON'T EAT PORK!
That should do it for pork. It's bad, don't eat it, EVER! There are plenty of GOOD HEALTHY meats to eat. Beef, chicken, turkey, and lamb.

For those of you that just have to have daily bacon, I would like to recommend what I eat every day with breakfast, turkey bacon. The best turkey bacon I have found is "Wellshire Classic Sliced Turkey" all natural uncured nothing artificial, minimally processed. NO NITRITES! The only place I have found it in my area is at Whole Foods.

On the home front.

Our first batch of Kombucha was ready last week. My daughter was so excited. It tasted better than the store bought kombucha. If you buy it by the case it's $3.00 for a 16 oz. bottle. We are making 3 gallons a week. I love saving that money. Plus I know I'm getting a better product.

My chickens are doing well.
I ended up with 40 chicks. I will be giving some to my daughter for my granddaughter to take care of. In a few months I hope to have plenty of fresh eggs. This should put an end to my table scrap problem and add to my compost pile.

Just Eat Real Food.
If your great grandmother wouldn't recognize it, don't eat it; if it's packaged in a box, don't eat it; if it's advertised on TV don't eat it. They don't advertise good food, when's the last time you saw a commercial for kale?

Will we ever learn?

I was just at a family get together and there were lots of breads, cookies, pies, brownies, LOTS OF SUGAR.

SUGAR IS TOXIC, IT KILLS!

Along with that we can add WHEAT and like grains. They are KILLING US.

I went to a family camp out. An announcement went out for every one to bring a few dozen cookies. When I mentioned that it might not be wise to have so much sugar people got offended and I heard about it.
Well my friends, better to be offended than sick or DEAD.
There were trays and trays full of cookies.
I wish someone had tried to tell me years ago, maybe I would have been offended, but maybe I would have listened and checked into it. Especially if I could see that person had turned their life around.

I know I may come on a little too strong in my belief, but I've seen first hand what this poison can do to you.
IT KILLED MY WIFE AND ALMOST KILLED ME! Because of this I've had no problem in putting this junk out of my diet.

I was listening to a podcast on Livin La Vita Low Carb and the speaker said, you have to associate something that is bad for you with something you don't like. He looked at baked goods as Brussels sprouts. He didn't like Brussels sprouts.
I think of sugar and wheat as crack cocaine. I've never done crack but I know it's bad for you. Sugar and wheat are like crack, literally.

Someone told me they were having trouble staying motivated. I can understand this, it's hard after a lifetime of eating that junk to just stop eating it. I said to him, "you're not ever tempted to eat pork are you?" He said no he was not, I said "Just look at it like pork".

Put out the sweeteners, grains, and starches. Wheat and Potatoes are powerful hypoglycemic, it's like eating sugar.

The leading source is fruit juices and sodas (43%).
Since 1974 consumption of sodas has doubled.
Teenagers are drinking an equivalent of 54 teaspoons of sugar a day, just from the sodas. How much more form the bread and candy they are eating.
Adults 40 to 59 years old increased intake of soft drinks by 250% between the years 1972 and 2001.
Older is not wiser, those over age 60 increased 300%.
It is estimated that 50% of people in the US have reactive hypoglycemia.

How Am I?

After 24 months I can say I am doing fine. Better than I ever thought I would be when I began this journey. I never expected to lose so much weight.

I had almost constant pain in my right side, it's gone now. I had pain and burning in my left leg, gone now. I had heart problems, gone now.

I went from out growing a 52 inch pants now down to a 33 inch waist. Going form a 4X shirt to a medium, it's great. I'm still losing weight. I've lost 155 pounds as of the last time I weighed a few days ago. How low will I go? I would like to lose another 10 pounds. I'll stop when I reach the right weight. I'm not on a diet so I don't know what that will be.

To be able to miss meals without being hungry is great. I get busy during the day and often forget to eat lunch, I don't miss it.

Energy! I have lots of energy. One of the greatest blessing of this weight loss it the fact that I can get down on the floor and play with my now 2 year old little grandchild. At 340+ pounds I could barely bend over to pickup something. I couldn't walk to the mail box and back without stopping to catch my breath, now I can run around the block if I want to. I can cut wood again. I'm making furniture again.

All the aches and pains that I thought were just part of "getting old" are gone. They are not a normal part of aging. Our bodies were designed to give us many years of healthy living.
Try it for yourself. Cut out the sugars, wheat, starches and bad oils. Eat a high fat diet and see it you don't feel better and start losing weight. Even if you don't need to lose weight you will still feel better once your body rids itself of the poisons.

I am rereading the book by Gary Taubes "Why We Get Fat, And What To Do About It".
This is a great book, If you haven't read this book you should.
It's not about calories in and calories out, calories don't matter.
It's not about how much you exercise.
It's what we eat and what we should not eat. IT"S THAT SIMPLE!
