THAT'S IT

My 160 Pound Weight Loss


That's it. 
I've posted most of my old blog. Starting back on June 24, 2011. 
Go back to that first post and read them all. See what prompted me to study into health and nutrition. And what I did to lose 160 pounds and keep it off for over 8 years now. 
You will find that first blog several pages down on this blog. 
I will be adding new posts from time to time. 

Remember, If I can do it, YOU CAN DO IT.

When I walk through a grocery store now, I enjoy a feeling of FREEDOM. 
I'm free from the addictions that grip the majority of people. FREEDOM from the brainwashing we've all received from childhood on what is GOOD for us.

I know that I am no better than anyone else. I too was were they are. I didn't know the truth about the food I was eating. It took a traumatic event in my life to wake me up. (see my first post to learn more). That's what it took to get me asking questions, and finding answers. The answers are there, you just have to want to ask the questions.

We are held captive by our food addictions. It's killing us. We are spending billions each year to treat these addictions. Thousands of lives are ruined and people dying because of diet.

After 24 months I can say I am doing fine. Better than I ever thought I would be when I began this journey. I never expected to lose so much weight.

I had almost constant pain in my right side, it's gone now. I had pain and burning in my left leg, gone now. I had heart problems, gone now.

I went from out growing a 52 inch pants now down to a 33 inch waist. Going from a 4X shirt to a medium, it's great. I'm still losing weight. I've lost 155 pounds as of the last time I weighed a few days ago. How low will I go? I would like to lose another 10 pounds. I'll stop when I reach the right weight. I'm not on a diet so I don't know what that will be.

To be able to miss meals without being hungry is great. I get busy during the day and often forget to eat lunch, I don't miss it.

Energy! I have lots of energy. One of the greatest blessing of this weight loss it the fact that I can get down on the floor and play with my now 2 year old little grandchild. At 340+ pounds I could barely bend over to pickup something. I couldn't walk to the mail box and back without stopping to catch my breath, now I can run around the block if I want to. I can cut wood again. I'm making furniture again.

All the aches and pains that I thought were just part of "getting old" are gone. They are not a normal part of aging. Our bodies were designed to give us many years of healthy living. 
Try it for yourself. Cut out the sugars, wheat, starches and bad oils. Eat a high fat diet and see it you don't feel better and start losing weight. Even if you don't need to lose weight you will still feel better once your body rids itself of the poisons. 

I am rereading the book by Gary Taubes "Why We Get Fat, And What To Do About It".
This is a great book, If you haven't read this book you should.
It's not about calories in and calories out, calories don't matter.
It's not about how much you exercise.
It's what we eat and what we should not eat. IT"S THAT SIMPLE!

Thanks to all of you for reading my blog. Over 14,000 of you from 63 countries have logged on since I first posted on June 24, of 2011. I'm still amazed that a man from the hills of Kentucky can reach so many people worldwide. 

I hope my story has helped you, encouraged you. Even if it's only made you laugh, I've done something.

If you've changed your lifestyle, if you are losing weight and feeling better, you have to tell others. You have to risk offending them. "Pay if forward" as they say. They might not listen at first but when they see the change in you, they will start to take notice and ask questions.
One reason I started this blog, was so I could have one place to send people for some answers.

Just Eat Real Food. 
If your great grandmother wouldn't recognize it, don't eat it; if it's packaged in a box, don't eat it; if it's advertised on TV don't eat it. They don't advertise good food, when's the last time you saw a commercial for kale?

Will we ever learn?

I was just at a family get together and there were lots of breads, cookies, pies, brownies, LOTS OF SUGAR.

SUGAR IS TOXIC, IT KILLS!

Along with that we can add WHEAT and like grains. They are KILLING US.

I went to a family camp out. An announcement went out for every one to bring a few dozen cookies. When I mentioned that it might not be wise to have so much sugar people got offended and I heard about it.
Well my friends, better to be offended than sick or DEAD.
There were trays and trays full of cookies.
I wish someone had tried to tell me years ago, maybe I would have been offended, but maybe I would have listened and checked into it. Especially if I could see that person had turned their life around.

"My People are destroyed for lack of knowledge". God.
A murder is ending life before it's time, many of us are doing this in the installment plan

I know I may come on a little too strong in my belief, but I've seen first hand what this poison can do to you. 
IT KILLED MY WIFE AND ALMOST KILLED ME! Because of this I've had no problem in putting this junk out of my diet. 

I was listening to a podcast on Livin La Vita Low Carb and the speaker said, you have to associate something that is bad for you with something you don't like. He looked at baked goods as Brussels sprouts. He didn't like Brussels sprouts.
I think of sugar and wheat as crack cocaine. I've never done crack but I know it's bad for you. Sugar and wheat are like crack, literally.

Someone told me they were having trouble staying motivated. I can understand this, it's hard after a lifetime of eating that junk to just stop eating it. I said to him, "you're not ever tempted to eat pork are you?" He said no he was not, I said "Just look at it like pork".

Put out the sweeteners, grains, and starches. Wheat and Potatoes are powerful hypoglycemic, it's like eating sugar.

We've been told that getting fat and sick is just a normal part of aging. IT'S NOT. Our bodies were designed to give us many many years of health and energetic life. It's what we have been putting into our bodies that have made us so sick. It's not normal to be sick, it's not normal to feel bad.

Nobody chooses to be obese, especially not children, but we are. This is a global pandemic. 
In 2001 six million kids in the USA were seriously overweight, in ten years that number has more than doubled.
Currently there are 30% more obese people in the world than malnourished.
There were 366 million diabetics in 2011, that is 5% of the world's population.
Experts predict 165 million Americans will be obese by 2030. 100 million Americans will have diabetes by 2050. Over a third of our population will be diabetic. You think health care cost are high now, you ain't seen nothing yet.

Dr. Robert Lustig, Professor of Pediatric Endocrinology at the University of California, San Francisco, argues that it is time for a paradigm shift in obesity science and policy, away from personal responsibility and toward public health. His presentation elaborates on his contention that sugar, like alcohol, should not be treated as an ordinary commodity on the open market.

Recently featured in the New York Times Magazine, Dr. Lustig has become a leading pubic health authority on the impact sugar has on fueling the diabetes, obesity and metabolic syndrome epidemics, and on addressing changes in the food environment to reverse these chronic diseases.

I don't like government intervention in food, but something has to be done about sugar. The sooner the better.
When we have family get togethers the main food is sugar and bread. Remember 2 slices of whole wheat bread will spike your blood sugar more than a snickers bar. It turns into sugar in your body. AVOID IT!

In the year1900 americans consumed about 4 pounds of sugar per person.
Today the average is now 129 pounds a year, a 2500% increase. (I've seen figures as high as 160 pounds and more per year). 57% of this comes from processed foods.
The leading source is fruit juices and sodas (43%).
Since 1974 consumption of sodas has doubled.
Teenagers are drinking an equivalent of 54 teaspoons of sugar a day, just from the sodas. How much more form the bread and candy they are eating.
Adults 40 to 59 years old increased intake of soft drinks by 250% between the years 1972 and 2001.
Older is not wiser, those over age 60 increased 300%.
It is estimated that 50% of people in the US have reactive hypoglycemia.

On the home front.

Our first batch of Kombucha was ready last week. My daughter was so excited. It tasted better than the store bought kombucha. If you buy it by the case it's $3.00 for a 16 oz. bottle. We are making 3 gallons a week. I love saving that money. Plus I know I'm getting a better product.
Give it a try, it's easy.

Kombucha is a type of tea that has been fermented and is usually consumed for beneficial health reasons, but often also has a taste that many enjoy. The two primary ways of obtaining Kombucha is by making it yourself at home or by purchasing it at the store. You can often purchase a commercial kombucha product and utilize the existing culture in the bottle to make a new “mother” mushroom by which to brew your own tea.

My chickens are doing well. 
I ended up with 40 chicks. I will be giving some to my daughter for my granddaughter to take care of. In a few months I hope to have plenty of fresh eggs. This should put an end to my table scrap problem and add to my compost pile.

WAUWATOSA, Wis. -- A local doctor is making the bold claim that the key to shedding pounds, reversing diabetes and stopping migraines is to cut out an ingredient that most people believe is healthy.

Dr. William Davis, a cardiologist from Wauwatosa, said the common ingredients are wheat and whole grains.

"Two slices of whole-wheat bread raise sugar higher than a Snickers bar," Davis said.

Pork consumption has a strong epidemiological association with cirrhosis of the liver. Startlingly, pork may be even more strongly associated with alcoholic cirrhosis than alcohol itself!
We would expect that if pork can cause liver cirrhosis it will also promote liver cancer, since injured and inflamed tissues are more likely to become cancerous.
Indeed, there is an association between pork consumption and the primary liver cancer, hepatocellular carcinoma.

NEED ANOTHER REASON TO AVOID PORK?

Tax payer dollars are being used to try and find a solution to this very dangerous problem, the solution? DON'T EAT PORK!
That should do it for pork. It's bad, don't eat it, EVER! There are plenty of GOOD HEALTHY meats to eat. Beef, chicken, turkey, and lamb.

For those of you that just have to have daily bacon, I would like to recommend what I eat every day with breakfast, turkey bacon. The best turkey bacon I have found is "Wellshire Classic Sliced Turkey" all natural uncured nothing artificial, minimally processed. NO NITRITES! The only place I have found it in my area is at Whole Foods.

Not letters but the modern equivalent, emails.

I love to hear from readers of my blog. I know I am not alone in my low carb journey.
As of today I've lost 150 pounds. It all began two years ago this month. When I began I never dreamed I'd lose so much weight, or feel so much better.

The latest letter is from Emma. Here is what she says:

"I have been following your blog.
Can you please tell me what you eat? What did you eat at the very beginning of your journey?
I have been trying to do zero carbs for 6 weeks and have only lost 15 pounds. I think the culprit is salt and fake creamer (sugar) that I have in coffee and diet pop. I have a long way to go. I would like to lose 80 pounds.

My answer:

Hi em.

It's nice to talk to people who read my blog.

When I first started my journey I didn't know much about nutrition. At first I learned that I should cut out processed foods, sugars, white flour. That's what I got rid of first. I learned that fast food and prepared foods were bad, so I cut them out. I learned that I should prepare all my food from the freshest ingredients I could find, so I do. I learned that I should cut down on carbs, so I did. Latter I learned the dangers of wheat, all wheat, even what we are told is "heart healthy whole grain". It's all bad.

I've cut out:
all sweeteners.
all wheat products.
starches.
sweet fruits, like watermelon pineapple, grapes, apples...
most vegetable oils.
all pork products.

I eat:
beef, fat cuts and organ meat is the best.
chicken, whole chicken, skin and all. I love baked chicken skin.
turkey, I love turkey bacon.
fish like salmon, cod, tuna, and sardines.
eggs, eggs are one of my favorite foods. I just bought a chicken coop and 28 baby chicks so I can have plenty of fresh eggs.
good oil like olive oil, tallow, and coconut oil.
green leafy vegetables like lettuces, spinach, kale, turnip greens...
I like tomatoes and onions.

When I want buns to go with burgers or hot dogs I make oopsie bread, which is made from eggs and cheese, or coconut and almond flour bread.
I eat crackers made of coconut, almond, and flax seed flour. Add cheese for great cheese crackers.
I make pancakes from coconut and almond flour, topped with strawberries or blue berries, no sugars.

I have plenty to eat, I never get board and I never miss the bad stuff. I don't get hungry all the time. I can miss meals and not even notice it.
I keep lots of raw nuts like almonds, pecans, walnuts, and cashews around to snack on.
I've lost 150 pounds over the last two years, my energy level is through the roof. 

I've learned to cut out ALL sweeteners, that means ALL natural or fake stuff. It all makes you gain weight.
Don't eat any foods that come out of metal cans, the BPA lining is a hormone that causes obesity and cancer.

I'm glad to hear about your weight loss. Stick with it, this is just the beginning. You'll continue to lose and feel a lot better.

I went to the dentist this week to have a tooth taken care of, one that has been giving me trouble for a long time.
The dentist said, "I want to thank you for telling me about the book Wheat Belly". I had told him about the book back in November. He said he bought it right after that. He and his wife have read it and changed their lifestyle. He told me of the weight he had lost and the physical symptoms his wife had that are now gone. He said he has given the book out to several friends and fellow dentists. He taught at the Dental school at the University of Kentucky for years before he retired to private practice. He said they are inviting Dr. Davis, the guy who wrote Wheat Belly, to come and lecture. I told him I would like to attend If he does.

More and more people are changing their lives for the better by putting the wheat and sugars out.

Speaking of Wheat Belly, there is a new podcast by Jimmy More called "Ask The Low Carb Experts" I highly recommend it. Show number 3 is "Healthy Whole Grains?" an interview with Dr. William Davis. Make sure you listen to the show and listen to the podcasts.

Dr. Davis says he didn't even scratch the surface of the dangers of wheat in his book Wheat Belly.

I just put a double batch of kale in the dehydrator. My favorite kale is laminate kale, also called dinosaur kale because it looks like dinosaur skin. Kale chips are fantastic, you have to try them. You can buy a very small plastic container of them at Whole Foods for $9.00, or you can make your own.
My little two year old granddaughter LOVES them. We call them Dino Chips.

Kale Facts
Kale is a member of the cabbage family – cousin of broccoli, cauliflower and collard greens – but its leaves do not form a head.   

There are several varieties of kale – curly kale, ornamental kale, and dinosaur (or Lacinato or Tuscan).

One cup of kale (36 calories) is chock full of beneficial nutrients such as:
Fiber – 5grams fiber; raw fiver binds bile acids and helps lower blood cholesterol levels

Antioxidants (carotenoids and 45 flavinoids),

Vitamins (1000% Daily Value vitamin K and 200% DV C) and Minerals (15% DV calcium, 40% DV magnesium, iron, magnesium)…

Sulforaphane a sulfur substance that may protect against certain cancers.

If you miss the crunchy salty potato chips then baked or dried kale is what you are looking for. 

I wash the leaves, remove the stems, dry them, make sure they are dry, lightly coat the leaves with olive oil, add sea salt and put them in the dehydrator or oven.
WARNING, you can't eat just one. THEY ARE GREAT!
